Winter Sausage & Squash Bake recipe

This is a fantastic one pot meal for the whole family, perfect for serving up on cold winter's nights. Chestnuts are used for a bit of richness and sweetness - don't save them just for Christmas as they are a wonderful year-round ingredient.


  • 1 butternut squash
  • Small bunch fresh sage
  • 1 x 450g pack chipolata sausages
  • 150g whole chestnuts
  • 1 x 150g mozzarella ball
  • Salt, pepper and paprika
  • 1 tbsp. oil


  1. Peel the squash and remove the seeds and stringy bits. Chop into cubes. Roughly chop the chestnuts.

  2. Put the squash into a large baking tin along with the sausages and the chestnuts. Toss with the oil, salt, pepper and paprika. Bake in a 190C oven for about 40 minutes, until the squash is tender and the sausages cooked through.

  3. 20 minutes into the cooking time, add the sage leaves, then 30 minutes into the cooking time, rip up the mozzarella ball and dot all over the squash and sausages. Serve.

You'll probably want to remove the sage leaves before serving as they can be a bit strong for some people. This recipe serves 4.
