Simple Sausagemeat Stuffing recipe

This is a fantastic base sausage stuffing recipe that you can serve with all sorts of dishes, such as roast chicken and turkey. It tastes wonderful as it is, but it is plain enough to add your own flavours - try adding a chopped cooked apple, freshly chopped sage or freshly chopped parsley.


  • 250g crusty bread, leftover
  • 450g herby pork sausages, skins removed (or 450g herby sausagemeat)
  • 1 large onion
  • 125g unsalted butter
  • 1 tsp. dried mixed herbs
  • Black pepper


  1. Rip the bread up and put into a food processor. Blitz until you have fine breadcrumbs.

  2. Finely chop the onion. Melt the butter over a low heat until foaming, then add the onion and cook gently until golden and caramelised, around 15-20 minutes. Be careful not to burn the butter.

  3. Add the herbs and cook for one minute, then stir in the sausagemeat, breadcrumbs and black pepper. Stir well then transfer to an oven dish.

  4. Bake at 180C for about 30 minutes, or until the top of the stuffing is golden brown and a little crunchy.

A few cooked chestnut mushrooms would be a great addition to this stuffing, or even a few chopped chestnuts. Recipe serves 6.
