Sticky Onion Glazed Sausages recipe

The onions in this recipe can be made ahead of time - meaning you have less to do come tea time. Serve with mash, homemade wedges or roasters.


  • 4 medium onions
  • 1 tbsp. butter
  • 1 tsp. sugar
  • 400g sausages, pork
  • 1 tbsp. plain flour
  • 400ml beef stock
  • 2 tbsp. Worcestershire sauce
  • Couple of fresh thyme sprigs


  1. Finely chop the onions. Melt the butter in a large saucepan, stir in the onions and cook gently for 10 minutes. Add sugar, stir well, and cook for another 20 minutes. Stir occasionally. The onions are done when there is no more liquid.

  2. Meanwhile fry the sausages for 15 minutes, until browned on all sides and cooked. Remove from the pan and keep warm.

  3. Add flour to the onions, stir well and cook for 1-2 minutes. Gradually whisk in the beef stock, add the thyme sprigs and Worcestershire sauce and simmer for 5 minutes. Add the sausages back in, stir to combine, season well and then serve.

Use red onions for a different flavour and use brown sugar for extra caramelisation. This recipe serves 4.
