Sausage & Olive Stew recipe

The olives in this stew are lovely little punches of salty flavour, and the oregano and mushrooms lend a lovely deep earthiness to the stew. Serve with mash or some crusty bread to mop up all that lovely gravy.

Ingredients:

  • 500g pork sausages
  • 100g black olives, stoned
  • 500g chestnut mushrooms
  • 400g tin chopped tomatoes
  • 1 tbsp. dried oregano
  • 3 garlic cloves
  • 200ml beef stock
  • Oil to fry

Directions:

  1. Mince the garlic cloves. Chop the sausages into chunks. Thinly slice the mushrooms.

  2. Heat the oil in a large saucepan. Add the sausages and brown on all sides, add the oregano and garlic and then stir in the tomatoes.

  3. Add the beef stock, mushrooms and olives, then simmer for 15-20 minutes until the olives, mushrooms and sausages are tender.

Add an onion or two for more flavour and texture. Recipe serves 4.

Fantabulous! So easy and delicous... beautiful colours, flavours and texture. Served it with colcannon... YUMMY!
