Sausages with Earthy Baked Beans recipe

This lovely one-pot meal is full of flavour - plus, you only have to wash up one pot. You can use a tin of regular baked beans instead of haricot beans if you like - you'll just get a little extra tomato flavour.


  • 6 pork sausages
  • 1 x 400g tin haricot beans, drained
  • 1 carrot
  • 1 onion
  • 1 celery stick
  • 4 rashers smoked bacon
  • 1 tbsp. tomato puree
  • 200ml chicken stock
  • 1 tsp. grainy mustard
  • Salt and pepper
  • Oil to fry


  1. Finely chop the carrot, onion and celery stick. Chop the bacon.

  2. Heat some oil in a large casserole pot. Fry the sausages on all sides until browned all over.

  3. Take the sausages out. Add the bacon and cook until it releases some oil, then add the carrot, onion and celery. Fry for 10-15 minutes until browned and softened.

  4. Add the tomato puree and cook out for a minute or two. Add the beans, mustard, salt and pepper and stock, then cover with a lid and bake in a 180C oven for half an hour or so. Stir well before serving.

Worcestershire sauce or even brown sauce would be a great addition to this dish - they would lend a lovely bit of spice and punch to the beans. This recipe serves 4.
