Sausage, Tomato, Pepper & Haloumi Bake recipe

This super simple sausage dish combines red peppers, red onions, cherry tomatoes, sausages and salty haloumi cheese. Serve it with roasted potatoes, or chickpeas, or butterbeans.


  • 8 thick pork sausages
  • 2 tbsp. each thick balsamic vinegar and olive oil
  • 3 red peppers
  • 3 red onions
  • 200g cherry tomatoes
  • 200g haloumi cheese
  • 1 tbsp. runny honey


  1. Peel the onions and chop into wedges. Chop the peppers into quarters, and remove the seeds and pith. Place onto a baking tray with the balsamic and oil, then bake for 10 minutes in a 180C oven.

  2. Add the sausages and tomatoes. Drizzle with the honey. Cook for another 25 minutes, turning once. Slice the haloumi into strips.

  3. 10 minutes before the end of cooking, add the haloumi strips to the baking tray. Serve.

For extra colour on the sausages, brown them in a fry frying pan before putting into the oven. This recipe serves 4.
