Salsa Sausages recipe

This is a super simple way to cook sausages in a slow cooker, giving you sticky, spicy sausages and a lovely thick sauce. Serve them up with mash, or just eat them as they are - it's entirely up to you.

  • 450g good quality herby pork sausages
  • 1 x 450g jar spicy tomato salsa
  • 1 x 400g tin chopped tomatoes
  • 2 garlic cloves
  • 1 red onion
  • 1 red chilli
  • 500g pack chestnut mushrooms
  • Oil to fry
  • Pinch each of paprika, salt and pepper

  1. Finely slice the red onion. Slice the chilli in half and remove the seeds, then thinly slice the chilli. Slice the mushrooms. Mince the garlic cloves.

  2. Heat some oil in a frying pan and fry the red onion for about 5-8 minutes until golden and softened. Add the garlic cloves and chilli and cook for another 2 minutes, then pour in the tomatoes and add the mushrooms. Stir well. Simmer for 5 minutes

  3. Stir the salsa into the sauce and season with paprika, salt and pepper.

  4. Pour half the sauce into the bottom of a slow cooker. Top with the sausages, then top with the salsa. Cook on low for 5-7 hours until tender and soft and the sauce thick.

You could also add a couple of chopped peppers to the sauce for extra kick and flavour. A courgette would bulk the sauce out a bit, too. This recipe serves 4.
