Easy Homemade Sausage Rolls recipe

These lovely buttery sausage rolls are suitable for feeding a crowd of people and the Dijon mustard lends a nice bit of kick. The sausagemeat stays plain in this recipe, although you could add herbs or cooked onion to taste.

  • 500g pork sausagemeat, seasoned with salt and pepper
  • 1 x 500g pack puff pastry
  • 4 tbsp. Dijon mustard
  • 1 whole beaten egg

  1. Unfold the pastry sheets and cut each sheet into 6, so you have 12 squares of pastry.

  2. Brush each pastry square on one side with mustard.

  3. Divide the sausagemeat into 12 balls and roll each ball into a little log. Place a log of sausagemeat onto each pastry square, then fold the pastry over the sausage to seal it, sealing with beaten egg.

  4. Turn the sausage rolls over so that they are seam side down, make two little cuts in the top with a sharp knife and brush with more beaten egg.

  5. Bake the sausage rolls in a 200C oven for 20 minutes, or less, until golden brown and risen. Serve hot or cold.

For a bit of extra richness, brush the pastry with butter before brushing with mustard. This will just every mouthful even more flavourful. This recipe serves 12.
