Pesto Sausage Pasta recipe

This family-friendly main meal is super easy to put together but tastes fantastic. Pesto, smoked sausages and cream cheese are tossed with cooked linguine for a lovely, filling dinner with an Italian twist.

  • 200g egg linguine
  • 1 smoked sausage, whole (usually about 150g-200g)
  • 4 tbsp. jarred red pesto (or use homemade)
  • 150g cream cheese
  • Salt and pepper
  • Pinch of mixed dried Italian herbs

  1. Cook the pasta in boiling salted water according to packet instructions until tender.

  2. Slice the smoked sausage and fry in a dry frying pan until starting to brown. Stir with the pesto, cream cheese, salt, pepper and a pinch of herbs with a few tbsp. (or more) of the pasta water until you have a thickish, smooth sauce.

  3. Toss the cooked pasta in the sauce, then serve.

Add some freshly chopped pine nuts and a sprinkle of freshly chopped parsley to make it a little more flavourful. This recipe serves 2-4, depending on your appetite!
