Sausage & Chicken Pasta recipe

This is basically like a speedy version of a traditional Italian ragu. Chicken and pork sausages are simmered in a red wine and tomato sauce, then tossed with fusilli pasta for a simple yet rich and impressive meal.


  • 250g dried fusilli
  • 1 chicken breast
  • 450g spicy pork sausage
  • 1 x 400g tin chopped tomatoes
  • 125ml red wine
  • 2 garlic cloves
  • 2 tbsp. freshly chopped basil
  • 1 tsp. dried oregano
  • Salt and pepper
  • Oil to fry


  1. Cook the pasta according to packet instructions in boiling salted water.

  2. Cube the chicken breast and the sausages and mince the garlic cloves.

  3. Heat a little oil in a frying pan and add the chicken and sausages. Cook until browned and no longer opaque. Add the tomatoes, minced garlic cloves, basil, oregano, red wine and salt and pepper.

  4. Bring to the boil, then reduce to a simmer and cook for 20 minutes. To serve, toss the cooked pasta into the sauce.

Add a chopped chilli for extra kick or use ordinary pork sausages if you don't like spice. This recipe serves 4-6.
