Italian Sausages with Peperonata recipe

A lovely warming dish made with multi-coloured peppers, red onion, Italian sausages and white wine, this simple meal is a wonderful way to use up any leftover veggies in your kitchen.


  • 6 Italian sausages
  • 1 onion
  • 1 red onion
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 4 garlic cloves
  • Good glug (around 60ml) white wine
  • 1 tsp. each dried basil and dried oregano
  • Salt and pepper
  • 2 tbsp. butter
  • 1 tbsp. olive oil


  1. Peel and thinly slice the onions. Chop the peppers in half, then remove the seeds and pith before slicing into strips. Finely chop the garlic cloves.

  2. Brown the sausages on all sides in a dry frying pan, then remove from the heat and slice.

  3. Melt the butter and the oil together in the frying pan and then add the red onion, onion and garlic cloves. Cook for about 5 minutes on a low heat until softened slightly, add the peppers, basil and oregano, season well and then add the wine.

  4. Simmer over a low heat until the peppers and onions are tender. Add the sausages, then cover the pan and simmer for about 20 minutes until cooked all the way through.

Add carrots for more sweetness, or blacken your peppers before cooking for extra flavour. This recipe serves 4.
