Devilled Sausages recipe

Herby pork sausages are simmered with a spiced sauce in this devilled sausages recipe. Worcestershire sauce, mustard and tomato puree combine with other ingredients to create a thick, sticky, spicy yet sweet sauce that matches beautifully with the meaty sausages.

  • 500g pork sausages, herbed
  • 125ml water
  • 2 tbsp. each tomato puree and Worcestershire sauce
  • 1 tbsp. each brown sugar and English mustard
  • 1 tsp. soy sauce
  • 1/2 tsp. cayenne pepper
  • Oil to fry

  1. Heat the oil in a frying pan and cook the sausages until browned on all sides. Remove from the pan and set to one side to drain on kitchen paper.

  2. Whisk the water, tomato puree, Worcestershire sauce, brown sugar, mustard, soy sauce and cayenne pepper together. Pour into a clean saucepan, then bring to the boil.

  3. Reduce the sauce to a simmer then add the browned sausages. Simmer for 15 minutes or so, until the sausages are cooked through and tender and the sauce thick.

Serve these sausages with some mashed sweet potato, or boiled rice, or even just some plain cooked veggies. This recipe serves 4.
