Cider-Braised Sausages recipe

Sausages are braised in sweet apple cider with smoky bacon, onion and mustard in this simple recipe that gives you a delicious ready-made thick gravy to serve over your sausages. Serve with creamy mashed potato or some crusty bread to mop up all that gravy.

Ingredients:

  • 8 pork sausages
  • 8 rashers of bacon
  • 1 large onion
  • 1 x 450ml sweet apple cider
  • 1 tbsp. Dijon mustard
  • 1 tbsp. plain flour
  • Oil to fry
  • Small handful freshly chopped parsley

Directions:

  1. Heat oil in a frying pan and fry the sausages on all sides until browned. Remove the sausages from the pan and drain on kitchen paper.

  2. Meanwhile, finely chop the onion and dice the bacon. Add the bacon to the frying pan and fry until it starts to brown, then add the onion. Fry until soft and golden brown, stirring occasionally.

  3. Stir the flour into the frying pan and cook for about 1-2 minutes. Gradually stir in the cider, whisking until smooth, then whisk in the mustard. Simmer for 5 minutes.

  4. Put the sausages back into the frying pan. Simmer for another 20-30 minutes until the sauce has thickened and the sausages tender.

These sausages would be delicious just with a some chopped, buttered cabbage or spinach. This recipe serves 4.

Added spinach as I had loads in the garden and it made for a very tasty tea.
