Sausage Chilli recipe

This rich sausage chilli is a great way to make the most of some cheap sausages using store-cupboard ingredients. Adapt it to your own tastes by adding more or less chilli. Serve with some plain boiled rice or some garlic bread.

Ingredients:

  • 8 sausages, pork
  • 120ml passata
  • 1 x 400g tin chopped tomatoes
  • 1 x 400g tin red kidney beans, drained
  • 1 garlic clove
  • 150g button mushrooms
  • 1 red pepper
  • 1 red onion
  • 1 tbsp. each BBQ sauce, tomato ketchup and chilli sauce
  • 1/2 tsp. each chilli powder, cumin and turmeric
  • 50ml red wine
  • Oil to fry

Directions:

  1. Chop the sausages into chunks and fry in oil until golden on all sides. Remove from the pan and leave to drain on kitchen paper.

  2. Meanwhile, thinly slice the onion and mince the garlic clove. Slice the mushrooms. Chop the pepper in half, remove the seeds and pith then dice the flesh.

  3. Cook the onion and pepper in the frying pan until softened, about five minutes. Add the garlic and mushrooms and cook for another five minutes or so. Sprinkle in the chilli powder, cumin and turmeric and cook for 1 minute.

  4. Pour in the tomatoes, kidney beans, passata and red wine. Bring to a simmer, stir well and cook for 5 minutes. Add the sausage chunks back in and cook for 10-15 minutes until soft and tender.

You could also cook this in the slow cooker on low for 5-7 hours if you want to save a little bit of time. This recipe serves 4.

That was an awesome quick dish, my daughter loved it, made it a bit dry and with black pepper.
